African cuisine - what can we find in the menu?

African cuisine is full of aromatic spices, exotic fruits and types of meat rarely seen in Europe. Dish preparation methods used in this cuisine can become an interesting inspiration for many cooks. Meet the most popular dishes from this region that you can add to your food truck’s menu!

Manioc - what is it?

Manioc is considered to be most popular edible plant grown in Africa. It is as frequently used in kitchen as, for example, potatoes in Europe. Both tubers and leaves of the plant are used. However, the former is extremely poisonous and must be subjected to proper thermal treatment before serving. Leaves are often served with meats, but you can also encounter their stewed variant on many African tables. Manioc is a key ingredient of tofu, which has a slurry consistency and is eaten as addition to many dishes, but also proves itself as a stuffing. Many places serve puree from this plant, however, it is prepared with coconut milk that gives the whole dish an exotic aftertaste. On shelves in Africa you can find manioc oil, flour, and even alcohol.

African-style rice - what style is it?

When looking for dishes typical for cuisine of this region, we can always find African-style rice. One of its most important ingredients are fresh vegetables and fruits. At this point we can list, among others, the previously mentioned manioc, as well as yams, black beans, or bananas and melons. Cardamom, curcuma, lemon juice, or various Arabian sauces are used in order to intensify the taste. When ordering an African dish in a restaurant, we can expect standard types of meat, such as chicken or pork, which is marinated in spices. However, traditional dishes served on that continent use ostrich, buffalo, or even crocodile or monkey meat. Seafood added to rice is also very popular.

Traditional African dishes

Food trucks often also offer dishes typical for African cuisine. Among them we can list the harissa paste that at the first glance is similar to hummus. However, it is made on the base of hot chili peppers and is served along with meat, vegetables, and even eggs. A combination of aromatic spices with intense taste give the paste a specific flavour. Among other standard dishes we can list tajine, the name of which originates from traditional vessel in which it should be served. It is a meat stewed with vegetables or other additions - additions vary depending on the region of Africa. It is prepared on glowing coals, but a grill is also suitable for this purpose.

African cuisine is very colourful and diversified. Almost everyone can find dishes perfectly suiting his/her taste, but it will especially interest fans of fresh vegetables, fruits, and intense spices.
